The youtube videos are a good visual step by step guides compared to xda text so use those videos are a step by step guide and their links are probably not malware but most definitely not updated so get the apks from xda directly as those guys maintain the links to updated version.
You can use Samsung Pay on non-Samsung phones, I've used it on an Active2 and GW4 with both a OnePlus 7T Pro and Pixel 6 Pro without issue. There was briefly a bug where you couldn't set it up from some non-Samsung devices, but I believe that's fixed now (it never stopped working for me). Google Wallet is of course functional regardless.
